Pienaar & Son is a father-and-son craft distillery in the Silo District of Cape Town's harbour, better known for its gins than for anything wine-based. Wild Cape Vermouth is their collaboration with The Blacksmith Wines — Cape wine as the base, built out with more than 15 locally grown botanicals, African wormwood and buchu among them.

Bright fruit up front, gentle spice through the middle, a savoury, herbal close. The house serve is the right one: a big chunk of ice, a splash of soda, a twist of orange. It also makes a Negroni with more Cape in it than the usual Italian rosso — not something to hide behind the gin.
