Alexandre Gabriel of Maison Ferrand built this with cocktail historian David Wondrich — the two reverse-engineered an authentic bottle of Pinet-Castillon Cognac from 1840, the style of "three-star" spirit that Jerry Thomas and his contemporaries actually poured behind the bar. The result is Grande Champagne cognac at 90 proof, higher than any standard VS, with the structure to hold its ground in a Sidecar or Old Fashioned without disappearing behind the citrus and sugar.
The grapes come entirely from Ferrand's own vineyards in Grande Champagne — the 1er Cru de Cognac — double-distilled on lees in copper pot alembic stills, aged in French Limousin oak for just long enough to add depth without softening the fruit. Most houses save their Grande Champagne grapes for V.S.O.P. and X.O.; 1840 puts the top cru into a mixing bottle at VS pricing.
