James Pimm opened an oyster bar in the City of London in 1832 and served a house digestif — gin laced with quinine, herbs, and caramelized orange — that he called a No. 1 Cup. By 1851 demand had outgrown the bar and Pimm’s went into large-scale production; the recipe has remained proprietary ever since, known to only a handful of people at Diageo, which now owns the brand.

The classic serve: Pimm’s over ice in a tall glass, topped with ginger ale or lemonade, and garnished with cucumber, mint, and strawberry. What you’re buying is the No. 1 Cup on its own — the foundational component that makes that build worth the effort.
