The Fyé parcel sits on the right bank of the Serein, alongside the sub-climate Chapelot within 1er Cru Montée de Tonnerre — Grand Cru Blanchots directly across the slope. A village-level designation with a Grand Cru address: 2.5 hectares of Kimmeridgian limestone with minimal clay topsoil, producing wines far more mineral and linear than the appellation tier alone suggests.
Patrick Piuze came to Chablis from Montreal in 2000 as a one-month intern and never left. He works with purchased fruit from hand-harvested, sustainably farmed sites, and where most négociants blend a single village cuvée he makes eight — each a named place, each the qualitative peer of his Premiers Crus, each vinified in stainless with indigenous yeast and zero new oak. The 2024 is a cooler vintage: mineral, focused, with the saline umami of great Chablis and a clean, stony finish.
