D.O. La Mancha sits on the high central plateau south of Madrid — hot summers, cold nights, virtually no rainfall. The conditions that make it difficult to farm are the same ones that make it work: the heat ripens Tempranillo and Garnacha fully without irrigation, and the sandy limestone soils keep yields in check. Vineyards here, planted between 1980 and 2000, are dry farmed and hand harvested without synthetic inputs.
Quadrum Wine Co. was founded in 2020 by siblings Monica and Victor Ordóñez — third-generation Spanish fine wine family, the same network that built the Jorge Ordóñez portfolio. The rosé is a 50/50 Tempranillo-Garnacha blend, co-macerated for 8 hours and fermented cold in stainless steel to lock in fresh white flowers, grapefruit, and strawberry. No oak. Drink chilled.
