Ravines Wine Cellars Cabernet Franc Finger Lakes 2023 750mL
USA : NEW YORK : FINGER LAKES
SUSTAINABLE : Cabernet Franc
MED-BODIED, PLUM, VIOLETS, RED CURRANT, TEA, NEUTRAL OAK
Ravines built its name on bone-dry Riesling, but this is the Finger Lakes' other story: two estate sites on Seneca Lake — White Springs' Honeoye loam and 16 Falls' shale-backed clay — blended roughly 70/30 for a Cabernet Franc that leans on structure over fruit weight. Two to three weeks on the skins, spontaneous malolactic in cask, then 14 months in neutral, three-year-old Austrian oak casks that add texture without spice. James Suckling calls the 2023 "only just beginning to reach its youthful best form," with velvety tannins and a long, well-structured finish — drinkable now, better from 2026.
PAIRINGS :
| Herb-roasted pork loin | savory herb notes in the wine echo the crust |
| Wild mushroom risotto | earthy mushroom meets the wine's own tea and earth notes |
| Charcuterie board | bright acidity cuts through cured fat |
