The Iberian Series draws its finishing casks from the Iberian Peninsula. This edition spends 14 to 25 months in tawny port hogsheads from Portugal after an initial maturation in bourbon barrels and oloroso sherry butts — the sequence that defines Redbreast's classic profile before the port adds its dried-fruit character.

Tawny port differs from ruby in one key way: it has aged oxidatively in small barrels for years, converting fresh berry into dried fig, caramel, and nut. That aging history carries into the whiskey — less jammy, more confected, and a better match for the pot still's natural richness.
