Sixty days on the skins. Most skin-contact whites do seven to thirty — Remhoogte's "Free to Be" cuvée commits to the full extraction, pulling tannin, pigment, and grip from the grapes until the result reads as amber-hued white with the tactile structure of a light red.

Fruit comes from the Honeybunch block on the south-facing Simonsberg slopes, the same vineyard that anchors the estate's Reserve Chenin. The cool aspect and altitude preserve the acid that long maceration would otherwise flatten — what could be oxidized mush at a warmer site stays precise, savoury, mineral.
