Made from virgin sugarcane honey — first pressing of fresh cane juice, not molasses — Zacapa is aged via Sistema Solera in highland warehouses at 2,300 meters elevation near Quetzaltenango. Altitude slows extraction and moderates temperature swings; the result is a more controlled aging curve than most sea-level tropical rum programs.

The “23” marks the oldest rums in the blend, not the average age; the Solera cycles through American oak ex-bourbon, oloroso sherry, and Pedro Ximenez casks. Drinkhacker scored it A (9.5): “fruity sherry notes...deeply roasted and spiced nuts, the essence of a solid cafe mocha — the finish lengthy and complex but not overwhelming.”
