Made in the volcanic highlands of Auvergne from yellow gentian root harvested near the Puy Mary — the highest peak in the Massif Central and source of the region's finest specimens — Salers has been operating since 1885 under the same recipe. It is the oldest gentiane liqueur in the world. Unlike Avèze and Suze, it carries less sugar and no artificial color, yielding a pale natural straw hue and a noticeably drier, more assertive gentian character.
The distillate is aged a minimum of three years — longer than any other producer in the category — rounding the sharpest edges while keeping the root's earthy, bittersweet presence center stage. Bartenders prize it for its ease of mixability: equal parts gin, Salers, and Dolin Blanc in the Blond Negroni; or simply over ice with a squeeze of lemon, which is how most of France still drinks it.
