Santa Tresa farms this estate in Vittoria, southeastern Sicily, where siblings Stefano and Marina Girelli converted a 300-year-old property to certified organic viticulture after taking it over in 2001 — among the first wineries on the island to make that move. Insieme ("together" in Italian) blends Inzolia and Zibibbo, hand-harvested in mid-September and fermented separately on their skins before blending and three months on fine lees.

The two varieties macerate on different timelines — Inzolia for two to three weeks, the more aromatic Zibibbo for up to six — which is part of what gives this wine its structure without tipping into anything heavy-handed. Expect grapefruit and orange peel up front, white pepper and dried apricot through the middle, and enough tannin grip from skin contact to make it a genuine food wine rather than a novelty pour.
