Organically farmed vineyards in Partinico, province of Palermo, at 440 meters — a site with more diurnal range than coastal Sicily, which keeps the acidity bright. Harvest is manual; the two varieties are treated differently: the Grillo is direct-press to preserve freshness, while the Catarratto gets 36 hours of skin contact before pressing — enough to add texture and a slight bitter-herbal depth without going full orange wine.
Stainless steel only, unfined and unfiltered. The haze in the bottle is normal and intentional. A fresh, textured Sicilian white built for the table.
