The original lavender bitters — Scrappy’s built the category. Sourced with fragrant Provençal flowers and handcrafted in Seattle since 2008 with no extracts and no artificial ingredients, the Lavender is bright and intensely floral with an earthy bitter backbone that holds in spirit-forward builds. Two to three dashes work in an Aviation or Gin Sour; the floral register opens up tequila-citrus builds — Lavender Paloma is the producer’s own example. At ~102 proof, it has enough ABV to hold its own against heavy pours.
