Shimaoka Shuzo has been brewing in Ota City since 1863, drawing water from a spring at the foot of the Akagi Mountains. The water runs notably mineral — harder than most Japanese sake water, which typically tends soft — driving a more vigorous fermentation and the round, broad body the brewery is known for. Shimaoka is one of the few Japanese sakagura to have maintained the kimoto-kei Yamahai method continuously since founding, relying on naturally occurring lactic acid bacteria rather than modern shortcuts. Everything they produce is aged for one to two years before release, which is where the earthy, caramel, and umami depth comes from.
