Txerri is a single-barrel selection of Astiazaran's classic sagardoa — wild-fermented in old chestnut barrikas and then macerated with cherries from Navarra for 90 days at a ratio of 500 grams per 5 liters. The Astiazaran family has been making cider in Astigarraga, ten minutes from San Sebastián, since 1880; Txerri is Juan Inaxio's experimental extension of that tradition.
The cherry adds body and a faint pinkish hue without sweetening the profile. It drinks closer to a classic Basque sidra natural than a fruit cider — the cherry is a whisper, not the argument.
