SoCo started as a rescue. When the 2020 harvest came in and Lanzarote's hotels were shut, the Puro Rofe team bought up the fruit small growers had nowhere to send — roughly 40,000 kilos — and vinified it in their own style. What was meant as a one-off is now a permanent label.
A soco is the semicircular lava-stone wall growers build around each hand-dug pit, sheltering a single vine from the Atlantic trade winds. With the Sahara 90km east and barely 100 litres of rain per square metre in an average year, that wall and the volcanic ash beneath it are the only reason a vine survives here.
Malvasía Volcánica, Listán Blanco and Diego, fermented spontaneously on native yeasts with nothing added. The fruit is picked early to hold acidity, and 2023 came in with unusually high malic — the wine keeps that tension.
PAIRINGS :
| Grilled octopus | char meets the wine's smoke note |
| Papas arrugadas with mojo verde | the island's own pairing; garlic and cilantro find the fennel |
| Raw scallops | enough weight to carry the sweetness, acid does the citrus work |
