St-Germain is made from Sambucus nigra elderflower blossoms picked by hand in the Haute-Savoie region of the French Alps each late spring — a harvest that lasts only a few weeks per year and leaves no margin for delay. Up to 1,000 individual blossoms go into each bottle. The flowers are gathered in the early morning, when their aromatic compounds are most concentrated, and macerated immediately: once picked, elderflower aromatics degrade within hours, and the entire point of the product is that freshness. The resulting liqueur is pale golden (the color comes from pollen — no artificial coloring added), intensely floral, and carries secondary notes of lychee, pear, and grapefruit zest that no extract-based substitute has reproduced.
Robert J. Cooper created St-Germain in 2007 as the world's first elderflower liqueur, naming it after the historic Parisian neighborhood of St-Germain-des-Pres and designing the bottle in Art Deco style of the Belle Epoque. Bacardi acquired the brand in 2013; the sourcing and process are unchanged. Paul Pacult of the Spirit Journal called it 'maybe the best new liqueur released in the last two decades.' At 20% ABV, it works as a direct pour over ice, a spritz base, or a modifier that adds elderflower aromatics to any cocktail without adding proof.
