The Stags Leap District earns its reputation through iron-rich volcanic soils and reliable afternoon winds off San Pablo Bay that moderate ripening and preserve acidity even in warm years. The 2019 growing season was textbook: a cool spring, long even summer, and late harvest that built slow phenolic maturity. Andy Beckstoffer called the year's Cabernet grapes "great intensity, deep colour and softer, more elegant tannins."
Winemaker Christophe Paubert trained at Château d'Yquem and Gruaud-Larose before joining Stags' Leap Winery in 2009 — a Bordeaux pedigree that shows in the blend construction (88% Cabernet Sauvignon, 7% Malbec, 3% Petit Verdot, 2% Cabernet Franc) and the wine's structure. James Suckling scored it 95 points: "full-bodied with chewy tannins... the tannins are full and creamy, with a polished, velvety texture at the end." Decant 30 to 60 minutes before serving.
PAIRINGS :
| Dry-aged ribeye with herb butter | cassis and cedar frame the beef; high acidity cuts through the fat |
| Braised short ribs with red wine reduction | the wine's plushness and chocolate finish are built for long braises |
| Lamb chops with rosemary and garlic | the dried rose and herbal notes mirror the lamb's natural perfume |
