Tasi is the younger half of a Verona family operation that has farmed organically since 1984, when the Fasoli brothers converted the estate after pesticides damaged their father’s health. The Ka-Bloom fruit comes off hillside vineyards above Tregnago that were an abandoned quarry before the family replanted them.
Corvina, Corvinone and Rondinella are picked at the start of September so the acidity stays sharp, then spend about half a day on the skins before a soft press. Native yeast, stainless steel, no fining and no filtering. The name is for the spring bloom that follows the estate’s bees, and it comes in a litre because that is how it gets drunk.
