The Dead Rabbit started as a bar — The Dead Rabbit Grocery & Grog in Manhattan's Financial District, opened in 2013 by Belfast natives Sean Muldoon and Jack McGarry and twice named World's Best Bar. The whiskey came later, in 2018, as a collaboration with Master Distiller Darryl McNally at The Dublin Liberties Distillery in Dublin 8 — a neighborhood that was producing whiskey before it was famous for anything else.

The blend of single malt and grain spends five years in seasoned ex-bourbon casks before a finish in small half-size virgin American oak barrels that adds structure and spice. More oak-forward than most blended Irish — the 88-proof ABV holds up neat and holds its own in cocktails without getting pushed around.
