Sherry Oak is the side of Macallan led by European oak, and the 18 is the second of its four ages — a limited annual release, matured for at least eighteen years on the Macallan Estate in Speyside in predominantly European oak casks seasoned with sherry in Jerez. The sherry never goes in the bottle. It seasons the wood for months, the casks are emptied and shipped to Speyside, and the spirit takes its flavour and its light mahogany colour from them. That colour is entirely natural.

Ginger, dark chocolate and dates are the producer's key notes, and they've held from release to release — sultanas, orange and cinnamon on the nose, then soaked raisins and mature oak on a full-bodied palate. The label carries a release year that changes annually, so the edition on the shelf may vary.
