Staff favorite! From the limestone Asvestaria vineyard, 3km from the Aegean, this single-vineyard Assyrtiko has high acidity, intense minerality, lemon zest, fleshy white peach, and a long finish. Solidly medium-bodied with texture and weight — refreshing now, but built to develop.
Fermented in stainless steel with selected yeast strains chosen for Assyrtiko, then aged at least six months on the fine lees. No oak. The Assyrtiko block went into the limestone Asvestaria vineyard in 2006, on a site that was quarried for plaster long before it grew vines.
A third-generation family estate at the foot of Mount Symbolo, imported by River Horse Selections. The Greek Wine Federation calls 2025 a strong year on Pangeon, with whites showing good structure, high acidity and marked freshness.
