Tzora Vineyards Judean Hills 2022 750ml
ISRAEL : JUDEAN HILLS
SUSTAINABLE : Cabernet Sauvignon, Syrah, Merlot, Petit Verdot
FULL-BODIED, DARK CHERRY, CASSIS, SPICE, CHAR, FRENCH OAK
The Judean Hills rise sharply from Israel's coastal plain, their limestone terraces holding heat through Mediterranean days and releasing it through cool mountain nights. Tzora Vineyards — founded in 1993 at Kibbutz Tzora — farms these slopes entirely on estate fruit. Winemaker Eran Pick, the first Israeli to hold the Master of Wine designation, makes wine with consulting input from Jean-Claude Berrouet of Château Pétrus, who has said the aim is "a wine that tells a sincere, authentic story of the local soil and climate."
The Judean Hills blend leads with 60% Cabernet Sauvignon for structure and black fruit, Syrah (25%) adding the smoky, earthy middle, and Merlot plus Petit Verdot rounding out the frame. Aged 12 months in French oak. Kosher for Passover, non-mevushal. IntoWine 90 pts. Drinking well now through 2027.
PAIRINGS :
| Brisket | the smoky Syrah component and firm tannins are built for braised beef |
| Lamb chops | Cabernet structure matches charred meat; dark fruit mirrors the richness |
| Aged hard cheese (Manchego, Kashkaval) | tannin and dark fruit hold up to the salt and density |
