Tzora Vineyards Judean Hills Blanc 2024 750ml
ISRAEL : Judean Hills
SUSTAINABLE : Chardonnay, Sauvignon Blanc, Sémillon
MED-BODIED, CITRUS ZEST, GOOSEBERRY, WHITE PEACH, SALINE, NEUTRAL OAK
Tzora Vineyards has been making the case for Judean Hills terroir since 1993, planted on ancient limestone terraces at nearly 2,000 feet of elevation, a dozen miles from Jerusalem, where altitude and Mediterranean breezes keep temperatures honest through harvest. The soil is shallow terra-rossa over limestone — old-vine fruit, low yields, hand-picked at night.
Winemaker Eran Pick MW — the first Israeli to earn the Master of Wine — keeps the recipe clean: cool fermentation, no malolactic, seven months on the lees in a mix of French barriques and stainless steel. The Sauvignon Blanc drives the citrus and gooseberry lift; Chardonnay fills the body; a share of Sémillon provides textural weight that outlasts the first glass. Kosher certified and Kosher for Passover.
PAIRINGS :
| Herb-roasted chicken | the Chardonnay body and quiet oak flatter roasted poultry without overpowering it |
| Grilled sea bass with lemon butter | citrus acidity mirrors the sauce; minerality cuts through the fat |
| Fresh goat cheese with herbs | Sauvignon Blanc's grassy lift and crisp acidity make this a reliable match |
