Misty Hills is Tzora's flagship, and it comes from a single plot: the north-facing slope the estate calls Fossils, planted on terra rossa over limestone. The name is a nod to the morning mists that settle over these vineyards when warm Mediterranean air meets cold air falling off the mountains, which is also what lets the fruit ripen slowly enough to hold its acidity.
Eran Pick has run the winemaking here since 2006 and became the first Israeli Master of Wine in 2016; Jean-Claude Berrouet, for decades the winemaker at Château Pétrus, consults. The 2023 spent sixteen months in French oak, 40 percent of it new. The wine is kosher and non-mevushal.
