A collaboration between Via Carota — the beloved West Village trattoria from James Beard–winning chefs Rita Sodi and Jody Williams — and Brooklyn's Forthave Spirits, the White Negroni took over 80 formula iterations to lock in. The White Aperitivo is a proprietary blend, clear in color, with gentian-root bitterness and herbal depth underneath the floral, lemon-forward nose.

Pour over a single large rock. Williams calls it her favorite end-of-evening pour.
