William Larue Weller pioneered the use of wheat as the secondary grain in 1849, creating a rounder, softer style of bourbon that bears his name — and eventually, through the same mash bill, the Pappy Van Winkle line. Full Proof bottles the wheated mash at the same proof it entered the barrel: 114 proof (57% ABV), non-chill filtered, retaining every oil and ester that standard filtration would remove.

The nose delivers vanilla, dark cherry, and caramel anchored by dark honey and ginger. On the palate it builds with caramel, toasted oak, dried orange, and a characteristic gumminess that marks wheated bourbon at real proof. The finish is long — creme brulee and chocolate, with lingering oak spice and dried orange peel.
