William Larue Weller introduced the wheated bourbon concept in 1849 — wheat replacing rye as the secondary grain, producing a softer, rounder profile. The Mash Bill #2 he pioneered is the same recipe Buffalo Trace uses today for both Weller and Pappy Van Winkle.
