Winestillery is the first craft distillery in the Chianti Classico zone — a family project by Enrico Chioccioli Altadonna in Gaiole in Chianti, built alongside the family wine estate. The starting point is Chianti wine, fermented on indigenous yeasts, then distilled to 95%+ ABV and redistilled a second time in the pot still.

The second pass uses the Carter Head method with a technique specific to this distillery: Alberese rocks from the estate's own vineyards are loaded into the basket, and the alcoholic vapors cross the stone before condensing. Alberese — the calcareous clay and limestone geology of Chianti Classico — is what drives the region's wine character, and here it drives the vodka's finish too. The result is clean and round on the palate, with real mineral length underneath.
