Cviček (pronounced TSEE-veck) is one of Slovenia's EU-protected wines — a legally defined blend of red and white grapes grown only in the Dolenjska sub-region of Posavje, at elevations above 210 meters on south-facing hillsides of clay and marl. In 2024 the composition is 50% Blauer Köelner (Žametna Črnina) with Blaufrankisch, Kraljevina, and Welschriesling rounding out the balance — each lot fermented separately in stainless steel, then blended to type before an early bottling.
Zajc Family Estate has been farming these same hillsides since at least 1858. All 70,000 vines across six sites are harvested by hand, and the wine ships young by design — legally required on the market within 30 months of harvest. Serve it slightly chilled.
