CROATIA : DALMATIA : HVAR
ORGANIC : Kuč, Bogdanuša, Prč, Maraština, Pošip
LIGHT-BODIED, DRIED FLOWERS, MELON, FIG, MINERAL, NO OAK
Five native Dalmatian grapes most drinkers have never met — Kuč, Bogdanuša, Prč, Maraština and Pošip — from Hvar, where Greek settlers were planting vines in the 4th century BC. Zlatan Plenković, a fisherman from the south-coast village of Sveta Nedjelja, filled his first bottle in 1986; his sons run the family winery today.
Each variety gets a couple of days on its skins, ferments on its own in stainless steel, and goes into the blend just before bottling after eight months in tank. No oak anywhere. The family calls it one of the lighter wines they make, but it still carries the dense, mineral core of the coast — dried flowers, melon and fig over a savory finish. Annual production is about 30,000 bottles.
PAIRINGS :
| Grilled branzino with olive oil and lemon | char and citrus meet the mineral line |
| Mussels buzara | the Dalmatian classic; garlic broth suits the savory finish |
| Baccalà mantecato on crostini | fresh, light white cuts the creamy salt cod |
