CROATIA : DALMATIA : ŠIBENIK
ORGANIC : Plavac Mali
MED-BODIED, DARK CHERRY, DRIED HERBS, SALINE MINERALITY, NEUTRAL OAK
Plavac Mali is Dalmatia’s indigenous red grape and Zinfandel’s Adriatic cousin — DNA-proven to share a common ancestor in the ancient Croatian variety Crljenak Kaštelanski. From Zlatan Otok’s organically farmed vineyard near Šibenik, at elevations between 50 and 300 meters on limestone and clay soils, this entry-level expression trades the power of the winery’s Grand Plavac for freshness: 18 months in stainless steel, native yeast, no filtration.
Zlatan Plenkovıć founded Zlatan Otok in 1991 — the year Croatia declared independence and the second private winery in the country. What started as an act of belief in Croatia’s wine future is now one of the country’s largest family-run producers, still led by its founder.
PAIRINGS :
| Octopus peka with potatoes | quintessential Dalmatian preparation — the wine exists for exactly this dish |
| Roasted lamb with rosemary | the herbal notes in the wine echo the rosemary; tannins handle the fat cleanly |
| Grilled oily fish (sardines, mackerel) | Adriatic salinity in the wine mirrors the coastal setting; slight bitterness cuts the richness |
