WINEMAKING : Fruit is hand-harvested and carefully sorted; ferments spontaneously in large cement tanks, open-top wood, and stainless steel; aged for an additional year in a combination of steel and wood and is bottled no sooner than 40 months after harvest; bottling is done without fining or filtration.
