Vinos Libres' Castilian partner estate: 172 acres at 730m on the Meseta plateau, farmed organically by a family in its third generation since 1923. No oak, cement fermentation. The entire pitch is about what happens when Tinta de Toro — the Tempranillo clone adapted to high-altitude continental conditions — is given nothing to hide behind.
Cement vats offer thermal neutrality without the reductive flavor-neutrality of stainless steel, and a slow micro-oxygenation that softens tannins over time. At 12.5% ABV with no oak, this is a wine built for the table. The one-liter format only adds to the argument.
