The Obermosel sits at the edge of the Paris Basin where Mosel meets Luxembourg — limestone soils, not slate, geologically closer to Chablis than to Bernkastel. Matthias Hild and his son Jonas farm five hectares here in Wincheringen, hand-working steeply terraced old-vine parcels of Elbling, a grape the Romans are believed to have planted in this valley 2,000 years ago.
"Zehnkommanull" — German for 10.0 — marks the wine's signature: it always ferments bone dry at 10% ABV or below, a feat of old-vine phenolic ripeness on limestone. Only 30–50 cases reach the US in any given year. Convivial, refreshing, and not overthought — it's exactly what it is.
