Cabernet has grown on the granite slopes of Simonsberg for over 300 years — one of the world’s oldest soils for this grape. The decomposed granite gives the wine its distinctively cool, earthy character: less fruit-forward than California, closer to Bordeaux in structure and restraint.
Winemaker Kristopher Tillery works with a light touch — twice-daily pump-overs during fermentation, 18 months in mostly neutral French oak (10% new) — letting the vineyard come through. The vines, planted in the late 1990s at 170–200 meters elevation, are mature enough to self-regulate: compact berries, concentrated fruit. The 2021 vintage brought cool spring temperatures and moderate yields; the wine carries a delicate mineral thread alongside the expected cassis and tobacco.
