Purity of fruit, outspoken aromas, and incredible drinkability from a small biodynamic paracel planted with 20-40 year old vines in “Le Clos des Carteries.” Grapes are hand harvested, and practices in the cellar are natural: semi-carbonic maceration with whole clusters for gentle extraction, spontaneous fermentation via natural yeasts, and no finishing, filtering, or sulfites added.

Est. in 1980 by Giambattista Cilia, Giusto Occhipinti and Cirino Strano, COS is one of the most important and influential natural wine producers of our time. This low-intervention Frappato (a native Sicilian varietal sometimes compared to Gamay or Cru Beaujolais) is easy-drinking, polished perfection — with layers of juicy black and red fruit, bright acidity, and soft tannins. Serve the Sicilian way, with a slight chill.

Rich and polished but made in a riper style and fairly easy-going (as far as Bordeaux goes), Chåteau Paloumey’s Haut-Médoc has deep black fruit with mint, vanilla, and tobacco notes from oak ageing.

Delicious Burgundian Pinot Noir made in a traditional, rustic style by the Parize family, who have been making wine in Givry for six generations with a focus on quality (grapes are hand-selected/harvested and hand-sorted first in the vineyard and then winery) and lutte raisoneé farming methods (a form of organic viticulture that does not use agrochemicals unless absolutely necessary).

‘Origines’ is somewhat of an enigma: deep, dark, and structured, it is also a very “feminine,” elegant wine — ethereal, even — with firm tannins and a persistent, fruity finish amidst delicate floral aromatics and gentle acidity.
In any case, it's an undeniably beautiful wine — one with lots of character and personality, exemplary of the region's terroir, and a wonderful pairing for grilled meats and charcuterie.
WINEMAKING : Maceration for 5 days with spontaneous fermentation via native yeasts; aged for 10 months in stainless steel & ⅓ in 500L oak barrels; minimal intervention & low sulfite

Rich, round, and textured, with tart stone fruit, bright acid, and stony minerality…this is easy-drinking elegance, and natural winemaking at its finest.

Sourced from a tiny parcel of Grand Cru Saint-Émilion vines tended to by Catherine Grébau, 'Christiana' was created with the help of Grébau's son, Bertrand (an esteemed chef and creator of Septime in Paris). Although classic in style, 'Christiana' is equal parts elegance and warmth, and therefore feels a bit more approachable than some of its peers – with concentrated dark fruit, fresh acidity, and soft tannins.

The “Blanc Fumé” (meaning: “smoky white,” in reference to the signature gun flint aromas of Sauvignon Blanc from Pouilly-Fumé) has the same minerality and fresh acidity of a Sancerre, but with riper fruit and a slightly creamier palate.
