MED-BODIED, LIGHT SKIN CONTACT, FRESH, TEXTURED, TROPICAL, FLORAL, SPICE, HONEY DRIED FRUIT, WALNUT, USED OAK
WINEMAKING : Low-intervention / "natural:" hand-harvest; spontaneous fermentation; no fining or filtration; small addition of SO2 before bottling. 20% of the grapes are fermented with the skins for around 3 weeks. Aged 12 months before bottling (80% in stainless steel; 20% in old French oak barrels).
